Turkey and Cheese Roll-Ups are a quick, nutritious, and kid-friendly lunch option. They’re easy to prepare and can be made ahead of time, making them perfect for back-to-school lunches.

- 4 large whole wheat tortillas
- 8 slices of mortadella
- 4 slices of cheese)
- 1/2 cup Hummus
- 1/2 cup shredded lettuce
- 1/2 cup sliced bell peppers
- 1/4 cup sliced cucumbers
- 1/4 cup shredded carrots
Preparation Instructions:
- Prepare the Tortillas:
- Lay out the whole wheat tortillas on a flat surface.
- Spread the Base:
- Evenly spread a thin layer of hummus over each tortilla, leaving a small border around the edges.
- Add Turkey and Cheese:
- Place 2 slices of mortadella and 1 slice of cheese on each tortilla, on top of the hummus.
- Add Vegetables:
- Add a handful of shredded lettuce, sliced bell peppers, cucumbers, and shredded carrots on top of the turkey and cheese.
- Roll Up:
- Carefully roll each tortilla tightly from one end to the other, ensuring the filling stays inside.
- Slice and Pack:
- Slice each roll-up into bite-sized pieces or pinwheels.
- Pack the roll-ups in a lunchbox with a side of fresh fruit, like apple slices or grapes, and a small container of mixed nuts or yogurt for a balanced meal.
