Ingredients:

  • 1 can (15 oz) Red beans
  • 1 cup cooked quinoa
  • 1 cup fresh spinach
  • 1/2 cup finely chopped onion
  • 1/2 cup grated carrot
  • 1/2 cup corn kernels
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper
  • Olive oil
  • tomato slices
  • lettuce wraps
  • whole grain buns

Preparation and Cooking Instructions:

  1. Prepare Ingredients:
    • In a large bowl, mash the red beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
    • Stir in the cooked quinoa, chopped spinach, finely chopped onion, grated carrot, and corn kernels.
  2. Combine Ingredients:
    • Add the breadcrumbs, beaten egg (or flaxseed mixture), minced garlic, ground cumin, smoked paprika, salt, and pepper to the bowl.
    • Mix until everything is well combined. The mixture should be firm enough to hold together; if too wet, add more breadcrumbs.
  3. Form Patties:
    • Divide the mixture into 8 equal portions and shape each portion into a patty. Flatten them slightly with your hands.
  4. Cook Patties:
    • Heat a small amount of olive oil in a skillet over medium heat.
    • Place the patties in the skillet and cook for 4-5 minutes on each side, or until they are golden brown and crispy on the outside and heated through.
  5. Cool and Store:
    • Remove the patties from the skillet and let them cool slightly on a plate lined with paper towels.

                  Store the cooked veggie burgers in an airtight container in the refrigerator for up to 4 days.
