Ingredients:
- 1 can (15 oz) Red beans
- 1 cup cooked quinoa
- 1 cup fresh spinach
- 1/2 cup finely chopped onion
- 1/2 cup grated carrot
- 1/2 cup corn kernels
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper
- Olive oil

Preparation and Cooking Instructions:
- Prepare Ingredients:
- In a large bowl, mash the red beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Stir in the cooked quinoa, chopped spinach, finely chopped onion, grated carrot, and corn kernels.
- Combine Ingredients:
- Add the breadcrumbs, beaten egg (or flaxseed mixture), minced garlic, ground cumin, smoked paprika, salt, and pepper to the bowl.
- Mix until everything is well combined. The mixture should be firm enough to hold together; if too wet, add more breadcrumbs.
- Form Patties:
- Divide the mixture into 8 equal portions and shape each portion into a patty. Flatten them slightly with your hands.
- Cook Patties:
- Heat a small amount of olive oil in a skillet over medium heat.
- Place the patties in the skillet and cook for 4-5 minutes on each side, or until they are golden brown and crispy on the outside and heated through.
- Cool and Store:
- Remove the patties from the skillet and let them cool slightly on a plate lined with paper towels.
Store the cooked veggie burgers in an airtight container in the refrigerator for up to 4 days.
